Raspberry-Lime-Cheesecake

This Raspberry and Lime Cheesecake is free from dairy and processed sugars and it tastes soooo good.

 

Dairy free cheesecakes are becoming very popular with many different kinds of food intolerance on the rise.

 

I love making vegan cheesecakes because they not only taste amazing but they don’t give you that blah feeling you get after eating a ‘real’ piece of cheesecake.

Makes 20cm round cake or 15cm square cake

 

Ingredients

 

Base
1 cup medjool dates (soaked in some warm water for 5 minutes)
1 cup raw almonds
1/8 tsp Himalayan salt

 

Lime Filling
1 cup cashews (soaked for at least 4 hours)
1/3 cup coconut cream
1/4 cup coconut oil
3 tbs coconut nectar
1/4 cup lime juice
zest from one lime
1/2 tsp supergreens powder (optional)
3-4 drops of Lime Essential Oil* (see notes)
Pinch Salt

 

Raspberry Filling
1 cup cashews (soaked for at least 4 hours)
1/3 cup coconut cream
1/4 cup coconut oil
3 tbs coconut nectar
3/4 cup raspberries
1/4 tsp vanilla paste
pinch salt

 

Method

1. Blitz base ingredients in food processor until it comes together like a sticky dough, put into lined tin and place in fridge to set.

2. Rinse and strain one cup of cashews then blend together with Lime Filling ingredients in Optimum Blender until smooth and creamy. Pour over base and place in freezer to chill.

3. Rinse and strain second cup of cashews then blend together with Raspberry Filling ingredients in Optimum Blender until smooth and creamy. Pour over lime layer and return to freezer.

4. Once the cake is set (4-6 hours) you can slice and store in a freezer safe container.

5. Remove from freezer 10-15 minutes before wanting to devour.

 

NOTE: Not all essentials oils are created equal so make sure you are choosing a pure essential oil without any chemical or synthetic fillers as these would have little to no health benefits what so ever.   • Where can I find coconut cream and coconut nectar.? I live in Florida. Maybe you tell me what it is? We have coconut mana. Would that work?
